Sweet Sherry Sauce
Good over steak or chicken.
Ingredients
~2 Tbsp Unsalted Butter
2 Shallots, large (or 3 smaller) — chopped small
2–3 Cups Heavy Cream
~1/3 C. Sweet Sherry (can add more to taste)
Salt & Pepper
Steps
Melt butter. Sauté shallots.
Add sherry and let reduce.
Add cream. Let simmer for ~15 min over low heat to desired thickness. Keep heat low to avoid foaming up.
Add salt & pepper to taste.
**If reheating, use very low heat — it will break if overheated.
