Æbleskiver

Danish pancake balls. Requires an Æbleskiver pan. Use an upside-down turkey baster needle to flip — a skewer doesn’t work great.

Steps

  1. Beat the yolks. Add sugar, flour, salt, and baking powder and milk.

  2. Add in shortening once it has cooled a little. Fold in the egg whites — the batter may seem a little lumpy, that’s normal.

  3. Grease the Æbleskiver pan molds frequently with shortening.

  4. Cook until set, flipping with needle to finish.

  5. Keep warm in a low oven until all are cooked. Refrigerate leftovers.

Serve with applesauce, butter, and syrup.
