Æbleskiver
Danish pancake balls. Requires an Æbleskiver pan. Use an upside-down turkey baster needle to flip — a skewer doesn’t work great.
Ingredients
3 Eggs — separated (Whip whites to stiff)
4 tsp Sugar
1/2 tsp Salt
1 tsp Baking Powder
2 Cups Flour
1/4 C. Melted Shortening (don’t use butter)
1 3/4 C. Milk (best at room temp)
Steps
Beat the yolks. Add sugar, flour, salt, and baking powder and milk.
Add in shortening once it has cooled a little. Fold in the egg whites — the batter may seem a little lumpy, that’s normal.
Grease the Æbleskiver pan molds frequently with shortening.
Cook until set, flipping with needle to finish.
Keep warm in a low oven until all are cooked. Refrigerate leftovers.
Serve with applesauce, butter, and syrup.
